Instructions
  1. Preheat oven to 400 degrees F. Heat olive oil in a large, oven-proof skillet over medium heat. Add turkey and onion. Sautée until turkey is cooked and onion is golden. Add garlic, peppers, and sweet potato. Cover and cook until sweet potato is tender. Add water or olive oil if needed to help sweet potato cook.
  2. When the sweet potatoes are tender, add the kale to the mixture, cook and stir until kale is wilted. Sprinkle mozzarella, salt, and pepper over the mixture and transfer skillet to the oven. Cook for about 10 minutes, until cheese is melted.

    This is a weekly staple in our house! My husband and I both love it, and it makes the best left overs. I have never added kale or cheese, though!

    I was curious about the omission of cheese, just not sticking it in the oven. Also, assume the paprika just goes in with salt and pepper? I think I’ve had this before but was looking around to try and use up some ingredients. Seems like a winner!

  5. Oh, this was amazing!! I used spinach rather than Kale. Not a kale fan at all. Will need to add more spinach next time, and there will be a next time! Yum!!

  6. This was a hit! Hubby was very happy and full! We don’t do kale here either, so spinach it was. Also added some garlic powder to give it an extra little kick. John gives it an A+! I love how easy it was to prepare also. Thanks!

  7. We liked this! As others did, I used spinach instead of kale (and increased the amount). For others considering this: Remember to add the smoked paprika at some point. (It’s not listed again in the directions.) Also, it’s really not necessary to use the oven. The cheese melts very quickly after adding it to the pan of hot ingredients. Everything is already cooked anyway! (Save the heat/energy if you’re making this in the summer. ?) Will make again!
