kale
– washed and chopped, stems removed

shredded mozzarella
sea salt + freshly ground pepper
Instructions
Preheat oven to 400 degrees F. Heat olive oil in a large, oven-proof skillet over medium heat. Add turkey and onion. Sautée until turkey is cooked and onion is golden. Add garlic, peppers, and sweet potato. Cover and cook until sweet potato is tender. Add water or olive oil if needed to help sweet potato cook.
When the sweet potatoes are tender, add the kale to the mixture, cook and stir until kale is wilted. Sprinkle mozzarella, salt, and pepper over the mixture and transfer skillet to the oven. Cook for about 10 minutes, until cheese is melted.
