Ingredients
- 2 cups quinoa , measure when cooked (use room temperature or cooled)
- 1 large cucumber diced
- 1 large green bell pepper diced
- 2 cups cherry tomatoes chopped
- 1/2 red onion diced
- 1 cup kalamata olives chopped
- 4 oz feta cheese crumbled
- 1/3 cup avocado oil
- 1/4 cup red wine vinegar
- 1 tsp dried oregano
- sea salt to taste

Instructions
- In a mason jar with a lid, mix together avocado oil, vinegar, oregano, and sea salt. Set aside.
- In a large bowl, add quinoa, cucumber, bell pepper, tomatoes, onion, and olives. Drizzle with dressing to taste and toss mixture until evening coated. Sprinkle feta cheese on top. Refrigerate for at least 30 minutes prior to serving. Serve cold or at room temperature.

Love this one. Planning to serve this as one of the salads at daughters graduation party. Just have to try and make it for 40-50 people!
