  1. In a mason jar with a lid, mix together avocado oil, vinegar, oregano, and sea salt. Set aside.
  2. In a large bowl, add quinoa, cucumber, bell pepper, tomatoes, onion, and olives. Drizzle with dressing to taste and toss mixture until evening coated. Sprinkle feta cheese on top. Refrigerate for at least 30 minutes prior to serving. Serve cold or at room temperature.
