Ingredients
- ½ cup cup brown or green lentils , rinsed
- 2 cups water
- ½ pint cherry tomatoes , quartered
- ½ medium English cucumber , diced
- 1 medium green bell pepper , diced
- ¼ medium red onion , chopped
- ¼ cup parsley , chopped
- ½ cup kalamata olives , pitted and halved
- ¼ cup feta cheese , crumbled
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp oregano
- 1 clove garlic , finely chopped
- sea salt and pepper

Instructions
- Add the lentils and water to a small pot over medium heat. Bring to a boil, reduce to simmer, and cover. Cook for 20 minutes, or until soft.
- Drain the lentils.
- Combine the chopped tomatoes, cucumber, bell pepper, red onion, parsley, olives, and feta cheese in a bowl. Add the lentils.
- In a small bowl, combine the olive oil, lemon juice, oregano, garlic, salt and pepper.
- Drizzle over the salad. Enjoy!
