  1. Add the lentils and water to a small pot over medium heat. Bring to a boil, reduce to simmer, and cover. Cook for 20 minutes, or until soft.
  2. Drain the lentils.
  3. Combine the chopped tomatoes, cucumber, bell pepper, red onion, parsley, olives, and feta cheese in a bowl. Add the lentils.
  4. In a small bowl, combine the olive oil, lemon juice, oregano, garlic, salt and pepper.
  5. Drizzle over the salad. Enjoy!
