Ingredients
- 1 ripe, but firm, banana
- 3-4 oz dark chocolate - chopped (or Enjoy Life chocolate chips if vegan or dairy-free)
- 1 1/2 tbsp coconut oil
- 1/4 cup toppings (sliced almonds, sprinkles, chopped peanuts, etc.)
- 2 popsicle sticks

- Line a baking sheet with parchment paper. Cut the banana in half and insert a popsicle stick into the cut end. Repeat for the second banana. Set the bananas on the baking sheet and place in the freezer for about 15 minutes.
- Over a pan of simmering water, melt the chocolate and coconut oil in a small bowl, stirring until smooth. Dip the frozen bananas in the chocolate and sprinkle with toppings. Freeze bananas for another 30 minutes. Store in an airtight container in the freezer.
