  1. Line a baking sheet with parchment paper. Cut the banana in half and insert a popsicle stick into the cut end. Repeat for the second banana. Set the bananas on the baking sheet and place in the freezer for about 15 minutes.
  2. Over a pan of simmering water, melt the chocolate and coconut oil in a small bowl, stirring until smooth. Dip the frozen bananas in the chocolate and sprinkle with toppings. Freeze bananas for another 30 minutes. Store in an airtight container in the freezer.
