Ingredients
- 1 large egg
- 1/3 cup quinoa , measure when cooked
- 1 cup greens (spinach, kale, chard, etc.)
- 1 tsp coconut oil
- salt + pepper to taste

Instructions
- Warm cooked quinoa if it's been in the refrigerator. Then, heat coconut oil in a medium skillet over medium-high heat. Add greens and sauté until just wilted. Sprinkle with salt and pepper. Remove and set aside.
- Crack egg into the skilled and reduce heat to low. Cook egg until the whites are set and the yolk begins to thicken. Serve egg over quinoa and greens.
Had some leftover quinoa so tried this for breakfast-so fast and easy and delicious!
