- 2 tbsp tomatillo salsa
- 1/2 avocado mashed
- 2 tbsp feta cheese crumbled
- 2 gluten-free tortilla wraps (like siete brand)
- sea salt to taste
- avocado oil for cooking

Instructions
- Start by adding the hummus, salsa, avocado, and feta cheese to the center of a tortilla wrap and top with the second tortilla wrap.
- Season with salt.
- Preheat a skillet over medium with the avocado oil and cook the quesadilla for about 3 minutes on each side or until it starts to get crispy.
We have a sesame allergy in my house so hummus is out for me. Any other ideas? Thanks.

Oh yes. Any bean will do and make a fun bean dip with olive oil, lemon, garlic. Maybe some cumin and chili powder or chipotle for a Smokey flavor. Just look up a hummus recipes and adapt or buy any bean dip in the market. You will love it!

This wasn’t my favorite, but might be the brand of salsa or tortillas I had? It seemed soo salty. I could only find one salsa at the store that was “tomatillo” is there another word for this style?
These sound delicious but I could see this getting too salty. Depending on the brand, both Feta and hummus can be really salty so maybe try a different brand? Or brick feta in brine instead of crumbled (sometimes you can gently rinse it.) Instead of tomatillo salsa, maybe look for hatch green chile salsa. I’m going to try these soon and will give more feedback then!
