Ingredients
- 1 cup raw cashews
- 1/2 cup coconut butter
- 4 tbsp pure maple syrup
- 2 tbsp coconut flour
- 2 tsp pure vanilla extract
- 1/2 tsp sea salt
- shredded coconut for rolling (optional)

Instructions
- Start by adding the cashews, coconut butter, and pure maple syrup to a high-speed blender or food processor and blend for 10 seconds.
- Add the remaining ingredients, minus the shredded coconut you are reserving for rolling the bites in.
- Blend until the mixture comes together.
- Place in the fridge for 15 minutes before forming into bite-sized rounds.
- Roll the bites into shredded coconut.
- Store in the fridge for an easy grab and go energizing snack!
Looks so good! Love everything in this Dec. food collection. Would reg. cow butter be an okay sub flavorwise for the coconut butter?
Hi Bethany! While we haven’t personally tried that, it’s likely that the texture will not be the same if regular cow’s butter is used in place of coconut butter. Texture-wise, a nut butter can serve as a substitute, but please note that the flavor will change accordingly. ?
