- 1 bulb fennel - shredded
- 1 jicama - peeled and shreeded
- 1 fuji apple - cored and diced
- 3 radishes - sliced into matchsticks
- 2 cups arugula
- 1/2 cup dried cranberries
- 1 tbsp fresh lemon juice
- salt + pepper

- 1/4 cup extra virgin olive oil
- 3 tbsp apple cider vinegar
- 1 tbsp fresh basil - chopped
- 1 tsp raw honey

Instructions
- In a small bowl, whisk together dressing ingredients. Set aside.
- Toss fennel, jicama, apple, radishes, arugula, cranberries, and lemon juice in a large bowl. Add dressing and toss to combine. Season with sea salt and freshly ground pepper.
