Ingredients
- 1 tsp olive oil
- 1 clove garlic , finely chopped
- 1 tbsp red onion , finely chopped
- 1/4 cup bell pepper , finely chopped
- 1/4 cup broccoli , finely chopped
- 2 large eggs , whisked
- 1/2 cup spinach , chopped
- 1 tbsp pesto store-bought or homemade
- 1 tbsp feta cheese (to garnish)

Instructions
- Heat the oil in a non-stick skillet over medium heat.
- Add the garlic, red onion, pepper, and broccoli. Cook until tender, about 3-4 minutes.
- Add the eggs and reduce heat to medium low. As the eggs begin to set, gently move a silicone spatula on the bottom and the edges of the skillet.
- When the eggs are nearly set, add the spinach and pesto and cook until the spinach is wilted.
- Transfer to a plate, season with salt and pepper, and top with feta cheese.
