  1. Heat the oil in a non-stick skillet over medium heat.
  2. Add the garlic, red onion, pepper, and broccoli. Cook until tender, about 3-4 minutes.
  3. Add the eggs and reduce heat to medium low. As the eggs begin to set, gently move a silicone spatula on the bottom and the edges of the skillet.
  4. When the eggs are nearly set, add the spinach and pesto and cook until the spinach is wilted.
  5. Transfer to a plate, season with salt and pepper, and top with feta cheese.
