Ingredients
- coconut oil or avocado oil for cooking
- 2 salmon fillets skinless
- 2 cups broccoli florets
- 1 tbsp olive oil
- 2 cloves garlic chopped
- 1 tsp onion powder
- sea salt + pepper to taste
- cauliflower rice for serving (easy prep method below!)
- 1/4 cup teriyaki sauce (no sugar added - like Primal brand)

Instructions
- Start by heating a skillet over medium heat with the cooking oil. Add the salmon fillets and cook for about 7 minutes on each side or until completed cooked through.
- While the salmon is cooking, preheat the oven to 375 F and line a baking sheet with parchment paper.
- Add the broccoli florets and drizzle with olive oil. Sprinkle with the chopped garlic, onion powder, sea salt, and pepper. Roast the broccoli for 15-20 minutes.
- Serve the broccoli with the cooked salmon over cauliflower rice and drizzle with teriyaki sauce.
How to Make Cauliflower Rice
- Simply cut a head of cauliflower into florets and add to a food processor. Process until it turns into “rice.”
- Add to a skillet with a drizzle of olive, coconut, or avocado oil, and sauté for about 5 minutes.
