Ingredients
- 1 head cauliflower cut into florets and in half lengthwise
- 2 tbsp avocado oil (or any cooking oil)
- 1 packet taco seasoning (like Simply Organic brand)
- 1 tbsp onion powder
- 1 can black beans
- 2 tbsp bacon cooked, cut into bites
- 2 tbsp green onion chopped
- cooked rice or quinoa (for serving)
- guacamole optional - for serving
- cilantro optional - for garnish

Instructions
- Start by preheating the oven to 400 degrees F and line a baking sheet with parchment paper.
- Add the halved cauliflower florets to a large mixing bowl with the avocado oil (or melted coconut oil) and add the taco seasoning and onion powder.
- Evenly distribute the seasoned cauliflower florets to the baking sheet and bake for 30 minutes, tossing halfway through.
- Remove from the oven and add the black beans on top and sprinkle with bacon bits and green onion.
- Serve over cooked rice or quinoa, guacamole (if desired), and cilantro.
Excellent! We devoured this dish. I added a little cheese and put it back in the oven for a few minutes to heat the beans & melt the cheese. Then topped with cilantro and a zig zag of plain yogurt (as sour cream) since my seasoning was a bit spicy. I used chopped smoked almonds instead of bacon since I don’t eat pork. Also, I didn’t need a whole packet of taco seasoning (I used Trader Joe’s). Delicious!

Just made the cauliflower which I’m going to add to my taco meat and veggies I defrosted. The cauliflower is SO good and this will become a regular for me.

Used fresh riced cauliflower, it’s what I had. So good, and I loved it with quinoa!
Do u think I could do this with frozen riced cauliflower??
Hi Patricia! I haven’t tried it with frozen riced cauliflower, but I think it would change the texture. Maybe try cooking or baking the riced cauliflower first for a little bit before following the steps above. Good luck!
