Ingredients

head
cauliflower
cut into florets and in half lengthwise

avocado oil
(or any cooking oil)

packet
taco seasoning
(like Simply Organic brand)

tbsp
onion powder
1
can
black beans
2
tbsp
bacon
cooked, cut into bites
2
tbsp
green onion
chopped
cooked rice
or quinoa (for serving)
guacamole
optional – for serving
cilantro
optional – for garnish
Instructions
Start by preheating the oven to 400 degrees F and line a baking sheet with parchment paper.
Add the halved cauliflower florets to a large mixing bowl with the avocado oil (or melted coconut oil) and add the taco seasoning and onion powder.
Evenly distribute the seasoned cauliflower florets to the baking sheet and bake for 30 minutes, tossing halfway through.
Remove from the oven and add the black beans on top and sprinkle with bacon bits and green onion.
Serve over cooked rice or quinoa, guacamole (if desired), and cilantro.
