Instructions
  1. Start by preheating the oven to 375 degrees F and grease a 9X13 inch casserole dish with coconut oil or line with parchment paper. 
  2. Add the chicken to the bottom of the dish and top with the broccoli florets, onion, cooked pasta, and sprinkle with the nutritional yeast, Italian seasoning, salt, and pepper.
  3. To make the dairy-free garlic cheese sauce, add all ingredients to a high-speed blender and blend until creamy. Store in the fridge until ready to use.
  4. Pour the dairy-free garlic cheese sauce over all the ingredients in the casserole dish, making sure to cover everything. 
  5. Bake for about 20 minutes or until the casserole starts to brown.

  1. I’ve made this twice and both times it was good! Second time I added some bacon bits I had on hand (delicious addition) and I had to use beef broth instead of chicken broth. Not sure if these additions take away from the nutritional value but I must say it gave it a bit more flavour!

    This was delicious! I used ghee to grease the pan and then added a little squirt to the sauce for a bit of a buttery flavor. I also added some crushed red pepper for a little heat. Overall, great nondairy “cheesy” sauce.

  3. Can someone tell me if the raw cashews need to be soaked for a couple of hours first? Or do they just get thrown in with the other sauce ingredients? Thanks! 🙂

  4. My son, who is not a fan of non-dairy cheese options, absolutely loves this dish. It’s been added to our regular family meal rotation. When your picky eater loves it, it’s a big win.

      Hi Bethany! It may chance the texture and flavor a bit, but almonds, macadamia nuts, and walnuts can be often used as a substitute for cashews in cashew-based sauces. (It may help to soak these nuts a bit first, as cashews are naturally creamier.) We haven’t tried nut substitutions this with this recipe, but we’d love to know if you give it a try!

  5. Made this for my first Sisterhood meal and it was DELICIOUS!! My whole family loved it! We will be using the dairy free garlic cheesy sauce as a go to sauce for many other dishes! SOOO GOOD!!!
