Ingredients
- 3-4 cups mixed greens
- 2 cups cooked chicken - chopped (or rotisserie if short on time)
- 1 small green apple - cored and chopped
- 1/4 cup golden raisins or dried cranberries
- 2 stalks celery - chopped
- 1/3 cup high-quality mayonnaise or Vegenaise (homemade is best!)
- 1/4 cup slivered almonds - toasted
- 1 tbsp apple cider vinegar
- 1 tbsp yellow curry powder
- salt + pepper

Instructions
- In a large bowl, combine chicken, apple, raisins, mayonnaise, celery, almonds, apple cider vinegar, curry powder, salt, and pepper to taste. Mix well.
- Serve over a bed of greens and enjoy!
I LOVED this recipe!! I bought a rotisserie chicken to make it easier, and after making the salad, I put it in a multigrain wrap with some lettuce. SO delicious!!
I was able to make 4 wraps out of this recipe, and they weren’t skimpy ones, either. 🙂
