– chopped (or rotisserie if short on time)

green apple
– cored and chopped

golden raisins or dried cranberries

celery

high-quality mayonnaise or Vegenaise
(homemade is best!)
1/4
cup
slivered almonds
– toasted

apple cider vinegar

tbsp
yellow curry powder
salt + pepper
Instructions
In a large bowl, combine chicken, apple, raisins, mayonnaise, celery, almonds, apple cider vinegar, curry powder, salt, and pepper to taste. Mix well.
Serve over a bed of greens and enjoy!
