Ingredients
- 2 onions (yellow works well)
- 2 tbsp coconut oil (or ghee)
- 1/2 tsp sea salt
- 1/2 tsp dried rosemary (or thyme)
- 1 tbsp coconut oil
- 8 slices bacon (or turkey bacon), chopped
- 8 eggs
- salt + pepper

Instructions
- In a large sauté pan or skillet, heat cooking fat, then place sliced onions in the pan. Cook onions for about 8-10 minutes until they become translucent. Then add the salt and dried herbs. Reduce the heat to medium-low and slowly cook the onions, stirring occasionally, allowing them to brown slightly before stirring each time. Onions will cook slowly on low for about 40-45 minutes. They will look brown and soft when done.
- After onions are prepared (you can do this ahead of time), preheat oven to 350 degrees F. Grease a 9x11 casserole dish with coconut oil. In a large skillet over medium heat, cook the bacon for 8-10 minutes or until crispy. Remove bacon and pat dry.
- In a mixing bowl, whisk the eggs and season with salt and pepper. Chop the bacon and mix into the eggs, then add the caramelized onions. Pour the egg mixture into the prepared casserole dish and bake for 30-40 minutes or until the eggs puff up and the edges slightly brown.
Recipe Notes
This dish freezes and re-heats well. It's great to make at the beginning of the week to have on hand for days to come!
