After onions are prepared (you can do this ahead of time), preheat oven to 350 degrees F. Grease a 9×11 casserole dish with coconut oil. In a large skillet over medium heat, cook the bacon for 8-10 minutes or until crispy. Remove bacon and pat dry.
In a mixing bowl, whisk the eggs and season with salt and pepper. Chop the bacon and mix into the eggs, then add the caramelized onions. Pour the egg mixture into the prepared casserole dish and bake for 30-40 minutes or until the eggs puff up and the edges slightly brown.
