Ingredients
- 1/2 cup high-quality mayonnaise or Vegenaise
- 1 tbsp dijon mustard
- 1/2 tsp dried tarragon
- 1 tbsp fresh parsley (or 1 tsp dried)
- 1 tbsp fresh lemon juice
- 1/2 tsp salt
- freshly ground pepper to taste
- 4 salmon fillets (about 6 oz each)

- Preheat oven to 400 degrees F. In a small bowl, whisk together mayonnaise, mustard, tarragon, parsley, lemon juice, salt, and pepper. Spread a thin layer of mayonnaise mixture on the bottom of a 9x13 inch glass baking dish. Arrange salmon in a single layer on top. Spread remaining mayonnaise mixture on top of the salmon.
- Bake, uncovered, for about 15 minutes. Cooking time may vary, so bake until cooked through and fish becomes flaky. Serve with quinoa and seasonal vegetables of choice.
We tried this recipe out today for dinner. It was delicious! We had it with pesto quinoa and a spinach-tomato salad.
Delicious! The whole family loved it. I did not have tarragon, so just subbed with dill. Great recipe!
Great recipe. I modified it using a pound of cod and subbing dill for tarragon. Perfect!
