- 2 tsp coconut oil
- 1 large peach , cut into wedges
- 1 tsp vanilla extract
- ¼ tsp cinnamon
- 2 tbsp chopped pecans
- 1 tsp maple syrup , optional
- ½ cup cottage cheese , low sodium if preferred

Instructions
- In a small skillet, heat the oil over medium heat. Add the peaches, vanilla, and cinnamon, cooking until the peaches are warmed through. Add the pecans, and maple, if using.
- In a medium bowl, combine the cottage cheese, top with peaches and pecans.
