Instructions
In a small skillet, heat the oil over medium heat. Add the peaches, vanilla, and cinnamon, cooking until the peaches are warmed through. Add the pecans, and maple, if using.
In a medium bowl, combine the cottage cheese, top with peaches and pecans.
