- ½ cup coconut flour
- 1 cup almond flour
- 1 tbsp baking powder
- ¼ tsp salt
- 2 large eggs , whisked
- ⅓ cup unsalted butter
- ¼ cup sugar
- 1 tsp vanilla extract

Instructions
- Preheat the oven to 350 F. Line a baking tray with parchment paper.
- In a medium bowl, combine the coconut flour, almond flour, and baking powder.
- In a second medium bowl, whisk together the eggs, butter, sugar, and vanilla extract.
- Add the wet ingredients to the dry to make a crumbly dough.
- Form the dough into a 6-inch circle. Use a sharp knife or dough scraper to cut into 6 triangles. Gently separate them slightly.
- Bake for 16 to 18 minutes, or until golden.
