  1. Preheat the oven to 350 F. Line a baking tray with parchment paper.
  2. In a medium bowl, combine the coconut flour, almond flour, and baking powder.
  3. In a second medium bowl, whisk together the eggs, butter, sugar, and vanilla extract.
  4. Add the wet ingredients to the dry to make a crumbly dough.
  5. Form the dough into a 6-inch circle. Use a sharp knife or dough scraper to cut into 6 triangles. Gently separate them slightly.
  6. Bake for 16 to 18 minutes, or until golden.
