Instructions
  1. Preheat the oven to 350 degrees F, and grease a loaf pan with coconut oil, or line with parchment paper. 
  2. Next, add the bananas to a large mixing bowl and mash. Add the eggs, melted coconut oil, vanilla, and raw honey and mix well. 
  3. Add the remaining dry ingredients and mix until the batter is smooth. 
  4. Pour the batter into the greased loaf pan and bake for 40-50 minutes or until a toothpick inserted into the center comes out clean. Be sure to check at the 40-minute mark and every couple of minutes after to be sure not to overbake the bread. 
  5. Allow to cool before slicing. 
  6. Enjoy with a slab of almond butter and hemp seeds.

      Hi Betty! You can substitute butter if you are not dairy free, ghee or any other lighter oil that you prefer. Hope you enjoy it!

    I can’t do nuts (though coconut is fine). Has anyone tried this with whole wheat pastry or GF flours?

      We haven’t tested with that, but do let us know how it goes! I have heard that you can sub “flax eggs” (google for the how to) for regular eggs. Keep us updated! 🙂

  3. This was sooooo good. I’m sure it is great as written, but I made a few modifications. I used butter instead of coconut oi. I added an extra banana and omitted the honey. And, I added some chopped pecans. Thanks for the recipe!

  4. I love oat flour. I just take the oats and put them in a blender. Then I substitute them for flour by weight. Great nut and gluten free option. ❤️

    I made this with half almond flour, half oat flour. Butter instead of coconut oil. And I added butterscotch chips because I thought it wasn’t going to be sweet enough- I was wrong about that but also have no regrets. So yummy

  6. I substituted almond flour with oat flour (pulverized oats, I didn’t have any almond flour) and honey with maple syrup (because I don’t like the taste of honey). I’ve been having my slices with natural almond butter and it’s been wonderful! What a delicious recipe, which, in my opinion, is as nice as traditional recipes which use butter and sugar! I think my partner prefers the traditional recipe as he’s not the biggest fan of the texture the oat meal has given this. Would almond flour be better?
