- 4 salmon fillets
- 1 cup pumpkin seeds without shells (pepitas)
- 1 bunch fresh cilantro
- 1 tbsp olive oil
- 2 cloves fresh garlic
- lemon
- salt + pepper

Instructions
- Preheat oven to 400 degrees F. Puff pumpkin seeds on the stove over medium heat for 1-2 minutes. Place seeds in a blender or food processor along with cilantro, oil, and garlic. Blend until smooth, adding water if necessary. Add salt, pepper, and lemon to taste.
- Brush a baking sheet with olive oil and lay fillets in a row. Spread a layer of pesto over each fillet and bake until cooked through, approximately 10-15 minutes. Serve with quinoa and roasted veggies of choice.
This is a recipe I will have to try again. I made the pesto, tasted it, and it was great. Once it was cooked on top of the fish (I used trout, very similar to salmon) it kinda lost the brightness. Might need to add more garlic, lemon, salt and pepper initially.
