Ingredients
- 1 head cauliflower , cut into florets
- 1 tbsp olive oil
- 2 tbsp chipotle pepper , in sauce
- 1 tsp smoked paprika
- ¼ cup salsa
- 1 avocado , sliced
- ¼ cup plain Greek yogurt
- lime wedges , to serve
- cilantro , to serve
- 8 taco sized tortillas , I like Siete brand almond flour tortillas

Instructions
- Preheat the oven to 400F. Line a tray with baking paper.
- Add the cauliflower florets to the tray. Drizzle with oil, and toss with the chipotle pepper and smoked paprika. Use the sauce in the can - if you can’t find the canned chipotle peppers, use chipotle seasoning or taco seasoning.
- Roast the cauliflower for 20 minutes, or until golden and tender.
- Assemble the tacos with salsa, and sliced avocado. Top with the greek yogurt, lime juice, and cilantro. Enjoy!
