  1. Preheat the oven to 400F. Line a tray with baking paper.
  2. Add the cauliflower florets to the tray. Drizzle with oil, and toss with the chipotle pepper and smoked paprika. Use the sauce in the can – if you can’t find the canned chipotle peppers, use chipotle seasoning or taco seasoning.
  3. Roast the cauliflower for 20 minutes, or until golden and tender.
  4. Assemble the tacos with salsa, and sliced avocado. Top with the greek yogurt, lime juice, and cilantro. Enjoy!
