Ingredients
- 1 can chickpeas - drained and rinsed
- 1 stalk celery - finely chopped
- 1/4 cup red onion - finely chopped
- 1/4 cup dill pickles - finely chopped
- 3 tbsp high-quality mayonnaise or Vegenaise
- 1 tsp dijon mustard
- salt + pepper

Instructions
- Place chickpeas in a mixing bowl and mash with a fork. Add celery, onion, pickles, mayonnaise, and mustard to the mixing bowl and stir well to combine. Season to taste with salt and pepper.
- Serve with cucumber slices or crackers.
I love this recipe! It’s amazing how much it really tastes like a tuna salad sandwich! Quick and easy to make too.
I have found it’s quicker and easier to mash the chick peas with a potato masher instead of a fork
Add some sea vegetables like dulse flakes to this and it takes it to the next level! Good for thyroid support too!
