Ingredients

chickpeas
– drained and rinsed

stalk
celery
– finely chopped
1/4
cup
red onion
– finely chopped
1/4
cup
dill pickles
– finely chopped

tbsp
high-quality mayonnaise or Vegenaise
1
tsp
dijon mustard
salt + pepper
Instructions
Place chickpeas in a mixing bowl and mash with a fork. Add celery, onion, pickles, mayonnaise, and mustard to the mixing bowl and stir well to combine. Season to taste with salt and pepper.
Serve with cucumber slices or crackers.
