- 1 English cucumber - diced
- 1 head romaine lettuce - chopped
- 1 1/2 cups cherry tomatoes - halved
- 1 small red onion - thinly sliced
- 6-10 kalamata olives - pitted and halved
- 2 oz feta cheese - crumbled (optional)

- 3 tbsp olive oil
- 1/4 cup red wine vinegar
- 1 1/2 tsp dried oregano
- 1/4 tsp salt

Instructions
- Combine chickpeas, cucumber, lettuce, tomatoes, and onion in a large bowl and set aside. Whisk together olive oil, vinegar, oregano, and salt.
- Drizzle dressing over salad and toss gently. Sprinkle olives and feta on salad just before serving.
