Ingredients
- 1/2 cup quinoa , uncooked
- 1 1/2 lbs chicken breasts - cut into strips
- 2 tbsp sesame oil
- 3 cloves garlic - minced
- 1 tbsp fresh grated ginger
- 1/2 cup coconut aminos
- 2 tbsp raw honey
- 1/4 cup orange juice
- 1 small onion - sliced
- 1 large red bell pepper - sliced
- 2 cups chopped broccoli

Instructions
- Prepare quinoa according to package directions.
- In a large skillet, heat sesame oil over medium-high heat. Add chicken and sauté until chicken is nearly cooked through. Add garlic and ginger and sauté for 1-2 minutes. Add coconut aminos, honey, and orange juice and stir until sauce has thickened. Once chicken is cooked through, remove chicken from skillet.
- Add vegetables to the skillet and stir to coat the vegetables in the sauce. Cover the skillet and cook until vegetables are just tender, about 5-7 minutes. Serve chicken and vegetables over quinoa.
