  1. Prepare quinoa according to package directions.
  2. In a large skillet, heat sesame oil over medium-high heat. Add chicken and sauté until chicken is nearly cooked through. Add garlic and ginger and sauté for 1-2 minutes. Add coconut aminos, honey, and orange juice and stir until sauce has thickened. Once chicken is cooked through, remove chicken from skillet.
  3. Add vegetables to the skillet and stir to coat the vegetables in the sauce. Cover the skillet and cook until vegetables are just tender, about 5-7 minutes. Serve chicken and vegetables over quinoa.
