Ingredients
- 2 cassava flour tortillas (Siete brand works well)
- 1/2 cup fire roasted tomatoes
- 1/2 cup shredded organic rotisserie chicken
- 1/2 cup chopped spinach
- 1 clove garlic , chopped
- 2 tbsp yellow onion , chopped
- 2 tbsp chopped sun dried tomatoes
- 2 tsp pine nuts
- 1 tbsp crumbled goat cheese (optional)
- sea salt to taste

Instructions
- Start by preheating the oven to 320 degrees F, and lining a baking sheet with parchment paper.
- Next, add the fire roasted tomatoes to the center of the tortillas, and top with the shredded rotisserie chicken, chopped spinach, garlic, and onion.
- Bake for 10 minutes. Remove from the oven, and top with the sun dried tomatoes, pine nuts, and crumbled goat cheese if using.
- Season with a pinch of sea salt and enjoy!
