cassava flour tortillas
(Siete brand works well)

fire roasted tomatoes

cup
shredded organic rotisserie chicken
1/2
cup
chopped spinach

garlic

yellow onion
, chopped

tbsp
chopped sun dried tomatoes

tsp
pine nuts

tbsp
crumbled goat cheese
(optional)
sea salt to taste
Instructions
Start by preheating the oven to 320 degrees F, and lining a baking sheet with parchment paper.
Next, add the fire roasted tomatoes to the center of the tortillas, and top with the shredded rotisserie chicken, chopped spinach, garlic, and onion.
Bake for 10 minutes. Remove from the oven, and top with the sun dried tomatoes, pine nuts, and crumbled goat cheese if using.
Season with a pinch of sea salt and enjoy!
