Ingredients
- 1 tbsp avocado oil for cooking
- 2 chicken breasts cubed
- 1 tsp garlic powder
- 1/4 cup gluten-free, low sodium teriyaki sauce
- 1/2 yellow onion chopped
- 1/2 cup carrots sliced
- 1 red bell pepper seeded and chopped
- 1 jalapeno pepper small, finely chopped
- 2 tbsp green onion chopped
- 1 tbsp fresh cilantro chopped
- 1 tbsp sesame seeds
- 2 lettuce cups for serving

Instructions
- Start by heating a large skillet over medium heat with the avocado oil.
- Add the cubed chicken and cook for about 7-10 minutes or until completely cooked through.
- Add the garlic powder, sauce, onion, carrots, bell pepper, and jalapeno pepper. Cook for another 7 minutes or until most of the sauce has cooked down. Remove from heat.
- Add the cilantro, chopped green onion, and sesame seeds and mix to combine.
- Serve the mixture over lettuce cups and enjoy!

Tips for cubing chicken ahead of time? Like how to store it? I don’t like reheated chicken, so don’t wanna cook it ahead of time, but like to meal prep everything I can at one time.
Hi Tasha! Some stores might actually sell pre-cut chicken. Otherwise, you can always cube it and then store it in the fridge or freezer in an airtight container/sealed bag until you’re ready to cook it. ?

Yum, this looks great. Where would a calorie count be? In WW most veggies are zero points, and chicken is very low. I’m needing to live a healthier life this 2021!

I made my own sauce
Simple teriyaki sauce by Goat Berry Kitchen
Ingredients:
1 cup water, 1/4 cup soy sauce, 5 tsps brown sugar, 1 Tbsp honey, 1/2 tsp ground ginger, 1/4 tsp garlic powder, 2 Tbsp cornstarch, 1/4 cup water.
Step 1: Combine 1 cup water, soy sauce, brown sugar, honey, ginger, and garlic powder in a saucepan over medium heat. Cook about 1 minute.
Step 2: Mix cornstarch and 1/4 cup water in a cup. Stir til dissolved. Add to saucepan. Cook and stir for about 5 minutes until thickened.

Our family loves this recipe! I sometimes add rice to half of the batch for those in my family who need something more filling. It tastes great with leftover veggies, green beans, asparagus, really anything. I also add fresh grated ginger for a little more flavor. So versatile and fun to change up.
