Ingredients
- 1 tbsp coconut oil for cooking
- 4 chicken breasts cubed
- 1/4 cup taco seasoning
- 1/3 cup water
- 4 taco bowls (or regular taco shells)
- 1 cup cooked brown rice
- 1 avocado sliced or cubed
- 2 tbsp shredded cheese for serving (optional)
- chopped cilantro for serving (optional)
- salsa for serving (optional)

Instructions
- Start by heating a large skillet over medium heat with coconut oil. Add the cubed chicken breast and saute for about 5-6 minutes on each side or until completely cooked through.
- Add the taco seasoning and water and stir to completely cover the chicken. Simmer for another 5-7 minutes. Set aside.
- Next, assemble the taco bowls by adding the brown rice to the bowl. Top with the cooked chicken, avocado, cheese, salsa, and cilantro.
So simple, quick, fun, and delicious! And my husband is a fan too! I could eat Mexican inspired dishes every day, so thank you for this new recipe to add to my regular rotation!
