Start by heating a large skillet over medium heat with coconut oil. Add the cubed chicken breast and saute for about 5-6 minutes on each side or until completely cooked through.
Add the taco seasoning and water and stir to completely cover the chicken. Simmer for another 5-7 minutes. Set aside.
Next, assemble the taco bowls by adding the brown rice to the bowl. Top with the cooked chicken, avocado, cheese, salsa, and cilantro.
