Ingredients
- 1 3/4 lbs chicken breast , diced
- 2 green bell peppers , diced
- 2 red bell peppers , diced
- 1 onion , diced
- 1/2 cup corn kernels , frozen
- 4 15 oz cans kidney beans , with liquid
- 2 15 oz cans diced tomatoes
- 2 tbsp tomato paste
- 2 cups warm water
- 2 tsp chili powder
- 1 tbsp dried parsley
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin

Instructions
- Coat a large pot with oil and place over medium-high heat.
- Stir in chicken, bell peppers, and onion until chicken is brown and peppers are tender.
- Stir in corn, beans, tomatoes, tomato paste and water.
- Season with chili powder, parsley, garlic powder, cayenne pepper and cumin. Reduce heat, cover and simmer for 40 minutes.
