- 2 pitas , halved and pockets opened
- 1 cup chopped cooked chicken
- ¾ cup shredded Romaine lettuce
- 1 roma tomato , sliced
Dressing
- ½ cup plain Greek yogurt
- 2 tbsp grated parmesan cheese
- 1 tbsp lemon juice
- 1 tbsp fresh chopped parsley
- 2 tbsp olive oil
- 1 tsp dijon mustard
- 1 clove garlic , minced
- ½ tsp anchovy paste , optional
- salt and pepper , to taste

Instructions
- In a small bowl, combine the yogurt, parmesan cheese, lemon juice, oil, mustard, garlic and anchovy paste (if using).
- Add the chopped chicken to the bowl and mix until well combined.
- Stuff the pita with the chicken, romaine, and sliced tomato.
