Ingredients
- 1 medium cauliflower
- 1 lemon , juiced
- 3 tbsp extra‐virgin olive oil
- 1/4 cup olives , pitted and coarsely chopped
- 2 tbsp parsley , chopped
- 1 tsbp capers , rinsed and chopped
- sea salt
- freshly ground pepper

Instructions
- Trim the leaves and core from cauliflower and break apart or cut into small florets.
- Cook until just done in salted boiling water. Drain and let cool.
- Stir lemon, salt, and pepper together in a large bowl. Whisk in olive oil.
- Add the cauliflower and toss with the dressing. Taste and add salt and lemon as needed.
- Add olives, parsley, and capers and toss gently.
- Serve with grilled chicken.
