Cauliflower Salad with Olives and Capers

Ingredients

cauliflower
1
lemon
, juiced

extra‐virgin olive oil
1/4
cup
olives
, pitted and coarsely chopped
2
tbsp
parsley
, chopped

tsbp
capers
, rinsed and chopped
sea salt
freshly ground pepper
Instructions
Trim the leaves and core from cauliflower and break apart or cut into small florets.
Cook until just done in salted boiling water. Drain and let cool.
Stir lemon, salt, and pepper together in a large bowl. Whisk in olive oil.
Add the cauliflower and toss with the dressing. Taste and add salt and lemon as needed.
Add olives, parsley, and capers and toss gently.
Serve with grilled chicken.
