- 1 cup chopped red cabbage
- 2 cups chopped romaine lettuce
- 1/2 cup shredded carrots
- 1 red bell pepper - seeded and chopped
- 1/2 cup cooked edamame - shelled
- 2 green olives - chopped
- 1 cup chopped mango
- 1/2 cup unsalted roasted cashews
- 2 cups cooked shredded or chopped chicken (optional)
Dressing Ingredients
- 1/3 cup natural creamy peanut butter
- 1 clove garlic - minced
- 3 tsp freshly grated ginger
- juice of 1 lime
- 2 tbsp raw honey
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1-2 tsp Sriracha sauce

Instructions
- Combine dressing in a food processor, jar with lid, or medium sized bowl. Mix until well blended.
- Combine salad ingredients in a large bowl and toss with dressing to taste. Serve immediately.
We really liked this recipe! I omitted the olives since my husband doesn’t like them and I changed the sesame oil to 1Tablespoon HOT sesame oil. I only used about half of the bell pepper and it still seemed like too much. Cashews, edamame, and mango were a great touch!
