Ingredients
- ¾ cup rolled oats
- 2 cups unsweetened almond milk
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ¾ cup grated carrot , about 1 small or medium carrot
- ¼ cup walnuts , chopped
- 2 tbsp unsweetened shredded coconut
- 2 tbsp chia seeds
- 1-2 tbsp maple syrup

Instructions
- In a large container, combine the rolled oats, almond milk, cinnamon, nutmeg, ginger, grated carrot, walnuts, coconut, and chia seeds.
- Shake or stir until well combined. Add the maple syrup, to taste.
- Cover, and let sit overnight.
- Divide into two bowls to serve.
