Ingredients
- 1 15 oz. can chickpeas , drained and rinsed
- 2 green onions , finely chopped
- 2 stalks celery , chopped
- 1 medium carrot , grated
- ½ green bell pepper , diced
- 3 tbsp buffalo sauce
- 3 tbsp tahini
- ¼ cup crumbled blue cheese
- 4 cups romaine or bibb lettuce
- ¼ cup cilantro , chopped
- 2 tbsp sunflower seeds
- tortilla chips , to serve

Instructions
- In a medium bowl, combine the chickpeas, green onions, green bell pepper, chopped celery, grated carrot, buffalo sauce, and tahini. Mix to combine and mash lightly with a fork.
- Divide the lettuce among two bowls. Top with the chickpea mixture, and garnish with cilantro and sunflower seeds.
- Serve with tortilla chips.
