  1. In a medium bowl, combine the chickpeas, green onions, green bell pepper, chopped celery, grated carrot, buffalo sauce, and tahini. Mix to combine and mash lightly with a fork.
  2. Divide the lettuce among two bowls. Top with the chickpea mixture, and garnish with cilantro and sunflower seeds.
  3. Serve with tortilla chips.
