Ingredients
- 1 head cauliflower , cut into florets
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 3 tbsp buffalo sauce
- 4 cups lettuce , chopped
- 1/4 cup blue cheese , crumbled
- 1/2 English cucumber , sliced
- 2 green onions , chopped
- 1 medium carrot , shredded
- 1/4 cup fresh cilantro (coriander) , chopped

- 1/4 cup plain Greek yogurt
- 3 tbsp buffalo sauce
- 1 lemon , juiced
- 2 tsp honey
- 1 tbsp water

Instructions
- Preheat the oven to 425°F/218°C. On a large baking tray, toss the cauliflower florets, olive oil, garlic powder, and paprika until evenly coated.
- Roast for 20 minutes or until golden. Drizzle with Buffalo sauce and roast for an additional 5 minutes.
- Divide the lettuce between bowls. Top with blue cheese, cucumber, green onion, and carrots. Add the cauliflower and cilantro.
- Make the dressing by combining Greek yogurt, buffalo sauce, lemon juice, honey, and water in a small bowl. Drizzle dressing over the salad and enjoy!
